Cooking Tradition Continues in Tamborine Restaurant

New apprentice Brandon Whannell embraces the chance to learn from Braedan Allen, Head Chef, Mount Tamborine’s trendy restaurant ‘Drift’.

When Head Chef, Braedan Allen of trendy Tamborine Mountain restaurant, Drift Cafe was looking to sign up a new apprentice he knew exactly who to approach and where to get the assistance he required.

Having been signed up himself as an apprentice by BUSY At Work’s Industry Training Consultant, Darrin Larney 12 years ago, Braedan knew where he would get the right advice and the right apprentice to help build his business.

“I recall being signed up by Darrin in 2005 and he was very professional in helping me get a start in the industry. BUSY really looked after me then so I had no hesitation in giving them a call when we needed a new apprentice to help grow our business,” Mr Allen said.

Darrin said it was great to see Braedan performing well in his chosen career and continuing to use BUSY At Work to provide employment opportunities for young people.

“I remember signing up Braedan with Cafe Ella as it was called then. It’s wonderful to see that Braedan has excelled in his trade and is now the head chef of one of Mount Tamborine’s most exciting lounge bar and restaurants.”

Meanwhile newly signed commercial cookery apprentice Brandon Whannell has settled in well to his new role at the Drift Cafe.

Since starting in March this year, the 22 year old has been busy learning about food preparation and hygiene, how to prepare and serve meals, as well as gaining an understanding of the operating side of the restaurant.

“I really enjoy the interaction with the customers and getting to understand what is required to be a good chef. Braedan is a fantastic mentor and it’s been good that I am able to learn from him,” Brandon said.

Having left school in Year 10 and worked in retail for a few years, Brandon said he soon realised that being a cook was his real passion.

“My grandfather owned a restaurant on the Gold Coast and I was keen to follow in his footsteps,” Brandon added.

Now three months into his Certificate III in Commercial Cookery, Braedan said Brandon was an enthusiastic and reliable member of the team.

“Brandon is very passionate about cooking and always puts in a great effort while at work. He is keen to learn and we look forward to one day seeing him become a Head Chef,” Mr Allen said.

BUSY At Work CEO, Paul Miles said it was pleasing to see young people go on and achieve success in their chosen career and be willing to train the next generation of apprentices.
